Unlockable NPCs become available once you’ve bred a set number of their genderflipped counterparts.

These monsters aren’t directly flipped from the farm monster species. They are significantly different than a genderbend version of those monsters should genderbends be voted into the game later.

For example, Zimonja’s gorgon-like tail hair would still be a hood in a genderbent version, Bane’s bipedal and obviously, Genome has two heads.

Since dragons are mostly extinct and chimera are manufactured, they don’t have NPC counterparts. I’m not sure if demons will or won’t. I guess we’ll have to wait and see!
